As promised when I shared our Halfway Homemade Croutons recipe last week, I’ve got a yummy halfway homemade Caesar Salad Dressing recipe to go with.
Making homemade Caesar salad dressing from scratch isn’t usually possible around here.
Who am I kidding? It never happens.
But I can greatly improve upon a healthy bottled dressing by adding just a few basic ingredients!
Halfway Homemade Caesar Salad Dressing
Our kids can’t have dairy (very often), or quite frankly I’d just buy Renee’s Mighty Caesar Dressing. Renee’s also has a light version of their Caesar dressing that is dairy free, but it’s just not quite flavorful enough for us.
Thus the halfway homemade Caesar salad dressing recipe I’m about to share.
- 1/4 Cup Renee's Caesar 1/2 Fat Dressing
- juice of 1/2 a medium lemon
- 1 garlic clove, minced
- 1/8 tsp sea salt
- fresh ground black pepper to taste
- Mix all ingredients in a glass measuring cup.
- Let sit a few minutes to allow flavors to blend.
- Serve over fresh Romaine lettuce and Halfway Homemade Croutons.
It’s really that simple. The salt and lemon juice add that Parmesan saltiness that’s missing in the light version of Renee’s dressing and the extra garlic makes this every bit as good as, if not tastier, than the Mighty Caesar Dressing.
